Roasted Purple Sweet Potatoes With Garlic Dipping Sauce

This roasted purple sweet potato recipe is simple and takes just a few minutes to put together. Roasted purple sweet potatoes can be a great side dish for any meal or can serve as your main dish, it’s up to you. I serve them with a delicious homemade garlic dipping sauce.


My affair with purple sweet potatoes started years when I came by them at a farmer’s market. I stood there wondering what kind of vegetable it was… I had no idea that there was such a thing as a sweet potato that is purple!

I picked up a few potatoes that day, just to try to cook them, and ended up sprouting them and growing my own purple sweet potatoes. It has been years… I harvest my potatoes in the fall, eat them through the winter, save a few for spring, sprout my potatoes, plant the slips, and harvest in the fall.

It’s amazing to have a fresh supply of this crop coming from the garden and I want to encourage you to try and grow them yourself even if you only have a container to grow them in. They are easy and fun.

But if you are here, I assume that you have your potatoes in hand and you are ready to figure out how to cook them. You can use purple sweet potatoes pretty much the same way that you use the more common orange sweet potatoes but they do taste a bit different.

Purple sweet potatoes are dense, drier than the orange potato, and not as sweet (they are sweet though). They are creamy and very healthy (full of antioxidants and vitamins).

Roasting purple sweet potatoes is a great way to serve them. This dish is easy to put together and can be a great addition to any meal. I make my own garlic dipping sauce and honestly, I sometimes just eat the potatoes with the sauce for dinner. Not much else is needed!

Ingredients For Roasted Sweet Potatoes…

For the roasted potatoes we are going to need a few purple sweet potatoes, salt, black pepper, garlic powder, and olive oil.

I’ll include the garlic dipping sauce recipe below as well. For this delicious garlic sauce we will need mayo, sour cream, yogurt, fresh garlic, fresh lemon juice, salt and black pepper, and a great addition is some dill or chives.

Tools for Roasting Purple Sweet Potatoes…

Cutting board, vegetable peeler, and a knife – you don’t have to peel your potatoes. You can just give them a good wash and then dice them. You can cut your potatoes any way that you choose. I diced mine but you can also cut them into wedges.

Large mixing bowl and measuring spoons – I place my diced potatoes in a large bowl, add the seasonings, and mix to coat the potatoes before transferring to the baking sheet.

Baking sheet, parchment paper, and a fish spatula – we’ll roast the potatoes in one layer on the baking sheet. Parchment paper always makes it easier to clean and the spatula will help us turn and transfer the potatoes into a serving dish.

How to Roast Purple Sweet Potatoes…

Start with a couple of large purple sweet potatoes…

Peeled roasted purple sweet potatoes.

I chose to peel my potatoes but you can choose to leave the skin on and just give them a good wash.

Slice your potatoes into circles half an inch thick…

Diced purple sweet potatoes.

And then cut the slices into little cubes, kinda like home fries… 

Adding olive oil to diced purple sweet potatoes.

Add the diced purple sweet potatoes to a mixing bowl and add five or so tablespoons of olive oil… 

Stems of rosemary.

Grab about four stems of fresh rosemary…

Chopped fresh rosemary leaves.

Remove the leaves from the stem and chop the rosemary really small…

Adding seasonings to diced purple sweet potatoes.

Add the rosemary to the mixing bowl and then add salt and pepper to taste and about a tablespoon of garlic powder.

Give the potatoes a good mix and make sure they are coated with the olive oil and the seasonings (you can add a couple more tablespoons of olive oil if you feel that it’s needed).

Line a baking sheet with parchment paper and set your potatoes in one layer on the baking sheet. Roast for 30 minutes in a preheated 400 Fahrenheit degree oven.

When the roasted purple sweet potatoes are ready, remove from the heat and set aside to cool slightly before serving.

Homemade Garlic Dipping Sauce Recipe…

To make the garlic dipping sauce, mix in a bowl or a jar one tablespoon of mayo, 1/4 cup of sour cream, 1/4 cup of plain yogurt, 2 or 3 minced garlic cloves, the juice from half a lemon, and salt and black pepper to taste (if you have dill or chives add those too. About a tablespoon of either one).

Transfer the roasted purple sweet potatoes into a serving bowl….

Dipping a potato in the garlic sauce.

And serve the garlic dipping sauce right next to it. Then, just grab a potato on your fork and dip it in the sauce before eating it.

Garlic and potatoes are a delicious combination and this dish works so well together. The potatoes are sweet and dense and the dipping sauce is garlicky and creamy.

This can be an amazing side dish for meat dishes (think steak or roasted chicken) or just an easy and simple meal (maybe add a delicious salad on the side).

Tips for Roasting Purple Sweet Potatoes…

  1. You can cut your potatoes any way you want and follow the same recipe. The only thing that might change is the roasting time.
  2. You can play with the seasonings and add different things. If you like heat, add hot paprika or cayenne. You might like to leave the garlic powder out or you might like to try to add cumin. The sky is the limit!
  3. If you don’t have fresh rosemary, dry rosemary works as well. Add about a tablespoon.
  4. make the garlic dipping sauce while the potatoes are in the oven so it’s ready for serving and serve the potatoes while they are still hot.

Delicious roasted purple sweet potatoes with homemade garlic dipping sauce.

Ingredients

  • 2 purple sweet potatoes
  • 5 tablespoons of olive oil
  • 1 tablespoon of finely chopped rosemary (fresh or dry)
  • 1 tablespoon of garlic powder
  • Salt and black pepper to taste

For the Garlic Sauce

  • 1 tablespoon of mayo
  • 1/4 cup of sour cream
  • 1/4 cup of plain yogurt
  • The juice of half a lemon
  • 2 or 3 minced garlic cloves
  • Salt and black pepper to taste
  • A teaspoon of dill or chives is optional

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Peel and cut your potatoes into 1/2 inch cubes (peeling is optional).
  3. Add the potatoes to a mixing bowl and add the olive oil, rosemary, garlic powder, salt and black pepper.
  4. Mix the potatoes to coat them with the seasonings and the olive oil.
  5. Line a baking sheet with parchment paper and set your potatoes in one layer on the baking sheet.
  6. Roast for about 30 minutes. When done, take out of the oven and let the potatoes rest for a couple of minutes.
  7. Mix all the ingredients of the garlic sauce together in a jar or a bowl.
  8. Serve the potatoes with the garlic sauce on the side.
