Do you know those days that from the moment you wake up in the morning, you know.
YOU know. You can sense it.
This is going to be one of those days.
One of those days that chaos is taking over the house. It usually starts when your kids wake up at 5:30 am. But they are not your kids, they are sea otters. They refuse to get dressed because, of course, sea otters don’t wear cloths. Duh.
Then, at breakfast, the girls are fighting over the yellow bowl of oatmeal. They send it flying, and you try real hard not to send them flying.
You take a deep breath but choke half way through when your toddler uses the oatmeal as hair conditioner.
It continues with playing in the toilet bowl with the toothbrush instead of actually brushing teeth. Then, a peek-a-boo game is ending with a broken shelf in the closet and all the clothes you folded yesterday in a pile on the floor.
At that point, your blood pressure is 150 over 105 and climbing. So you think, let’s go outside to breath some fresh air. It seems to work, and you think this was a good idea, only to turn around and find said toddler stomping in the newly germinated garden. Adios garden.
At lunch time, the jelly is gluing the bread to the wall, and the fruit is squished between two tiny hands to make juice.
Forget nap time!
By the time your husband opens the door you figure there are two options to choose from: either he handles the kids until they pass out for the night (while you go hide in the bathroom), or you are going to stick them in the chicken coop with the chickens.
Dear husband opens the door, parks on the coach and start telling you how hard his day at work was because his computer was just too slow.
That’s it! He is going in the coop with the kids!
Girlfriend, I hear you. I do.
This is why I’m going to give you this easy chicken recipe. There is nothing to peel, almost nothing to slice, no mountains of dishes to wash, and minimal labor involved. Best of all, it’s a super healthy dinner.
Healthy, Easy Chicken Dinner Recipe

8 Pieces of chicken. You can use any pieces you want. I took a whole chicken and divided it into eight pieces.
3/4 Cup olive oil.
2 large or 3 smaller carrots. No need to peel but slice each one to 3 or 4 pieces.
A bunch of parsley.
4 stems of fresh thyme or one tablespoon of dry thyme.
4 stems of fresh rosemary or one tablespoon of dry rosemary.
1 head of garlic. Separate the cloves but don’t peel.
15 small potatoes.
1. In a dutch oven, mix chicken, oil, carrots and parsley.
2. Add salt and pepper.
3. Add thyme and rosemary.
4. Let the chicken marinade for two hours.
5. Heat oven to 350F.
6. Add garlic and potatoes.
7. Add some more salt and pepper and mix well (this is best done by hand).
8. Bake covered for one and a half hours, then uncover and bake for 30 more minutes.
9. Serve with salad or bread or both.
- You can use any pot you can bake in, doesn’t have to be a dutch oven. If you want to get your hands on a dutch oven, here is a great one.
- Use any kind of potatoes you want. I used the smaller potatoes from my garden. You can use new red potatoes or regular potatoes and slice them in half.
- The garlic inside the cloves will turn into a paste. Squeeze it out and spread it on your chicken. I will take the credit if you die and go to heaven 😉
- If you are on your way to self-sufficiency, this is a great meal to grow at home. Herbs can come from your herb garden, potatoes and carrots from your vegetable garden, and meat chickens from the coop. Just don’t confuse the chickens with the kids or the husband if they end up in the coop!
- Salad and bread are not mandatory! It’s a whole meal in one pot.
- You can use parsley root instead of leaf parsley.
- My house is air conditioned, so I left the pot with the chicken to marinade on the counter. If you don’t feel comfortable doing that, stick it in the fridge.
After you feed the little monsters and the husband, I recommend letting the husband wash the dishes and sending the kids to bed dirty.
Yeah, you heard me right. Nothing is going to happen if they sleep dirty one night!
