COOK THE BEETS...

PEEL THE BEETS...

After the beets are cooked, the skin usually comes off easily.  Cut the tops and the bottom of the beet and peel it.

NEXT...

CUT THE BEETS

Half or quarter your beets.  If the beets are smaller than 2'' in diameter you can also leave them whole.

PACK THE BEETS INTO JARS

Pack the beets into the clean jars and cover them with boiling water. Make sure to leave 1'' headspace...

CLEAN THE RIM OF THE JAR...

Use a clean, damp paper towel to clean the rim of the jar...

CLOSE THE JARS...

Center the lid and close the jar with the ring.

PROCESS IN THE CANNER...
