Here is my favorite quick, easy and healthy green beans recipe. Those green beans are made with butter and garlic and are a great easy and healthy side dish.
My pole beans are doing great this season. So far I harvested 6lb of beans from five plants. They climb all over the railing of the front steps of the house so dinner is, literally, right out the door. Ha! My kids sit on the front steps and eat them fresh from the vine. I am lucky I actually got to cook some.
Next, we are going to steam the beans. I used to have one of those nice vegetables steamer thingies, but after weeks of being used as a bed for my kids’ plastic animals, it broke. So now I am using a good old pasta pot and the animals sleep in my favorite strainer.
How long to steam the beans depends on how crunchy or soft you like them to be. I like my beans pretty crunchy so I steamed them for 10 minutes from the time the water started boiling. If you are using fresh beans you will notice they change color to a much vibrant green.
While the beans cook, peal and mince five garlic cloves and add to a large bowl.
