Simple roasted okra with olive oil, garlic, and a sprinkle of cheese — a quick, easy side dish that even okra skeptics will love. Ready in under 30 minutes.

Okra is one of those vegetables that gets a bad reputation — and honestly, I get it. Slimy, stringy, weird texture… I’ve heard it all. But here’s the thing: roasted okra is a completely different experience. When you roast it at high heat, all that sliminess disappears, and you’re left with something almost crispy, a little nutty, and really, really good.
We grow okra on the farm every summer, and by August, there is so much of it to eat and share with our customers. This simple roasted okra recipe is one of my favorite ways to use it up — it comes together in minutes, and it disappears fast at our dinner table.
Ingredients…
- Okra
- Olive oil
- Garlic powder
- Salt
- Black pepper
- Chili or cayenne pepper (optional, for heat)
- Shredded white cheddar, Asiago, or parmesan cheese
Watch Me Roast Okra…
Step-by-Step Instructions…
Step one — Preheat your oven and prep your pan. Set your oven to 425°F and let it fully preheat while you get everything ready. Line a baking sheet with parchment paper and drizzle about a tablespoon of olive oil right onto the parchment. This helps the okra get a nice sear on the bottom.
Step two — Slice the okra. Cut each piece of okra lengthwise, right down the middle. You’ll end up with two flat halves — and that flat cut side is what’s going to get golden and slightly crispy in the oven. Don’t skip this step and try to roast them whole; the cut side is everything here.
Step three — Arrange the okra on the pan. Place the okra halves in a single layer on the prepared baking sheet, cut side down. This is important — you want that flat side making direct contact with the oiled parchment. Don’t overlap or crowd them, or they’ll steam instead of roast.
Step four — Season. Drizzle the remaining tablespoon of olive oil over the top of the okra, then sprinkle with garlic powder, salt, and black pepper. If you like a little heat, add a pinch of chili or cayenne pepper here too. It adds a nice kick without being overwhelming.
Step five — Roast. Slide the pan into your preheated 425°F oven and roast for 25 minutes.
Step six — Add the cheese and serve. Pull the pan out of the oven and let the okra cool for just a few minutes — this is important so the cheese doesn’t melt into a puddle and disappear. Then shred your cheese of choice right over the top. White cheddar, Asiago, and parmesan all work beautifully here. Serve warm.
How to Serve…
- As a side dish – serve it as a side to baked fish or grilled fish. Serve it as a side to these delicious fried chicken meatballs or chicken gizzards. Or as a side to a hamburger or a simple dish of chicken and rice.
- Add it to a vegetarian meal – serve it with vegetarian stuffed grape leaves, lentil patties, or spinach patties. Or as an extra something to any salad!
- As a snack! Simply make a pan of roasted okra and set it on the counter for everyone to pick from. It’s a healthy snack for any time during a summer day.
How to Store…
- On the counter — Roasted okra is really best eaten the day it’s made. If you need to leave it out for a couple of hours before serving, that’s fine.
- In the refrigerator — Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop it back in the oven at 400°F for about 5–8 minutes to crisp it back up. The microwave works in a pinch, but it won’t be as good.
Kitchen Notes…
- Don’t skip the high heat — 425°F is the sweet spot for roasted okra. Lower temps won’t give you that golden, slightly crispy result; they’ll just steam the okra and bring back that texture everyone’s trying to avoid.
- Cut side down matters — Always place the okra cut side down on the pan. That’s where the magic happens. Flip them, and you lose the best part.
- Single layer is non-negotiable — Crowded okra steams; it doesn’t roast. Use two pans if you need to.
- Make it spicier – Chili powder or flakes, smoked paprika, red pepper flakes, or cayenne powder all add heat. I don’t personally like spicy food, but many report that this dish is delicious with some heat! Add as much as you like.
- Wait before adding the cheese — Let the okra cool for a few minutes out of the oven before shredding cheese on top. If it’s too hot, the cheese just melts flat, and you lose that nice texture.
- Fresh vs. frozen okra — I’ve only tested this with fresh okra from the farm. Frozen okra has more moisture and may not roast the same way — if you try it, thaw and pat it very dry first.
- Cheese options — White cheddar gives a mild, creamy flavor; Asiago is a little sharper; parmesan adds a salty, nutty bite. All three are great — use what you have.

Ingredients
- About a quart of okra
- 2 tablespoons of olive oil, divided
- 1 teaspoon of garlic powder
- Salt and black pepper to taste
- Chili or cayenne pepper to taste (optional)
- 1/4 cup shredded white cheddar, Asiago, or parmesan cheese
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper and drizzle about a tablespoon of olive oil onto the parchment.
- Slice each piece of okra lengthwise down the middle.
- Place the okra in a single layer on the baking sheet, cut side down.
- Drizzle the remaining tablespoon of olive oil over the top and sprinkle with garlic powder, salt, black pepper, and chili or cayenne pepper if using.
- Roast for 25 minutes, until edges are golden and cut sides have color.
- Remove from the oven and let cool for a few minutes, then shred cheese over the top. Serve warm.
Notes
