Beets are an amazing crop for the homesteader! Learn how to grow, preserve, and cook beets as you explore the links below.
I love, love, love beets! It took me a few seasons to figure out how to grow them, but now they are (alongside carrots) a main crop in both my spring and fall gardens.
Beets are healthy and beautiful. Both the beetroot and the top of the plant are edible. There are so many recipes for both parts of the plant and they are all delicious.
Beets are also a great crop for the homesteader because they are easy to preserve. Not only do they last a long time in cold storage as a fresh beetroot, but they can also be preserved by canning, drying, pickling, or fermenting.
Since I grow a lot of beets, I’ve tried so many ways of using them. All the beet tutorials I have here on the blog and on Youtube are linked below. If you need a little help figuring out how to grow beets or handle them after harvest, you’ll find this information helpful.
Growing Beets…
- How to Grow Beets – everything I know from years of growing beets. People often ask me how I grow my beets to be so large and beautiful… I have to admit that they aren’t the easiest crop but totally worth the effort.
Preserving Beets…
- Dehydrating Beets – not my favorite way of preserving beets but definitely a valid way. I like these as a snack, like beet chips or to make beet powder to use as seasonings.
- Canning Beets – this is my favorite way of preserving beets! It’s easy and if to be honest, right this minute, I have canned beets on the shelf from four years ago.
- Fermenting Beets – also a favorite way, however, I won’t consider it a long-term storage option simply because they are so so good that we eat them so fast!
- Pickling Beets – a new way for me. I am still trying to get used to vinegar. I pickle a lot of beets for the farmer’s market tho. People around here LOVE pickled beets!
Beet Recipes…
- Israeli Beetroot Salad – right from my mother’s kitchen. This is a salad that was on every Friday night dinner at my house. It’s delicious and so healthy!
- Spinach Patties – in this tutorial, I use spinach, however, I follow this same recipe with beet tops. Hands down, this is my favorite vegetarian recipe!
- Pumpkin and Beetroot Salad – a filling, healthy, fun, and delicious fall salad.
Beet Content in Video Form…
- How to Dry Beets – a short video to show you how easy it is to dry beets.
- Canning Beets at Home – watch me can beets for long-term storage.
- Lacto Fermented Beets – watch me ferment beets. We love eating these as a snack.
I hope that you found valuable information here! As my love affair with beets deepens, I’ll keep adding more and more tutorials so make sure to come back and check this page!
